High School Pig Roast, Without a Kitchen?

In many high schools across the state, there are Culinary Arts classes being taught with fully equipped kitchens. Children are being educated using the most modern equipment or in some cases equipment that's worn but, still very usable. On the other hand there maybe classrooms that contain nothing except four walls and a chalkboard, and that's when you have to take a step back. Look at what you have, improvise, and make it work.

Here at Hackensack High School the Culinary Arts class learned about the wonderful world of pig roasting. The only problem we ran into was there is no kitchen. So, we went to my friend and borrowed his box roaster, then purchased the pig from a local butcher. After aquirering the rest of the ingredients and some charcoal out came a wonderful 3 day lesson on pig roasting and a great lunch to boot.
